

When I originally made these brownie bites I was trying to come up with a high protein chocolate snack to send in my kids lunches, so I just started throwing stuff in the food processor and tasting it until I thought it tasted good and became thick enough to roll into bites.
I wasn't sure how they would go over but to my surprise they loved them and thought they tasted like little brownies! The whole batch was gone in 1 day and they were asking for more. I've made them several times now and these have become one of our go-to desserts.
These tasty little things are super easy to make AND they're chocolate AND they're high in protein :) I really hope you give them a try because if you try them I'm sure you'll be hooked like us!
- 1 C Blanched Almond Flour (You can grind your own in a coffee grinder)
- 1/3 C Whole Pitted Dates, soaked in water if hard
- 1 Tsp. Pure Vanilla
- 3 1/2 Tbsp. Cocoa Powder + extra for rolling (optional)
- 2 Pinches of Salt
- 3 Tbsp. Mini Dairy Free Chocolate Chips, or finely chopped dairy free chocolate
- 1/16 Tsp. Baking Soda (for taste)
- 1 Tbsp. Honey or Agave
- 1/4 C Almond Butter
1. Add all ingredients to a food processor. Pulse until well combined.
2. Using wet or greased hands, roll dough into small bite-sized balls. Lightly roll in cocoa powder if desired... or you could even drizzle them with melted chocolate, hummm. Oh yeah, then place on parchment lined baking sheet. Place in fridge until set.
3. Store in sealed container in the fridge.
