Kroger deals: Week of January 30th

To contact us Click HERE
Kroger frequently has a store wide sale, where if you buy 10 participating item, you will save $5.00 off of your order instantly at the checkout. Basically, you end up saving 50 cents off of each of the ten items you purchase. If you can combine this sale with using a coupon for every item, you really maximize your savings.

Here is one of the endless combinations I came up with for this sale using coupons from this week's newspaper ......

#1. Ragu pasta sauce is $1.16 when you buy it in the 10 items you purchase for this sale. This weeks paper has a coupon to save $1.00 off of two jars. Final price will be aprox. 66 cents each at the check out. Buy 4 jars, using two coupons.

#2 Cheez-It cracker are marked down to $2.49 each. There is a coupon to save $1.00 off of two boxes, making the final price per box $2.00. Use two coupons and buy 4 boxes.

#3. Marzetti Veggie Dip is marked down to $2.50, and there is a coupon available in this week's paper to save 50 cents off off ONE dip. This coupon will double to $1.00, so the final cost of one dip will be $1.50. Dip the aforementioned Cheez-Its in said dip. Use two coupons and buy two dips.

So there you have it. 10 items purchased, with $5.00 instantly saved at checkout, and another $6.00 saved from coupons. The total for all 10 items should be about $13.00, which equals a savings of about 45% off of the original price.

This is what real couponing is about, there is no need to go all psycho extreme when you can build your stockpile little by little, each week.

Frankenmuth, Michigan

To contact us Click HERE
Frankenmuth, Michigan.......my favorite 'local' vacation spot. There is literally something for everyone there, including: famous chicken dinners with a German influence, camp grounds, lots of available alcohol vendors, country stores, knitting/scrapbook/craft stores, farms, river boats, a natural and organic industry, horse drawn carriages, breweries and wineries, an even a military museum!

If you crave a Bavarian-styled oasis in mid-Michigan that is steeped in early American history, then Frankenmuth is the place for you.

I will highlight a few of my favorite attractions here for your viewing pleasure:

Lodging:
Bavarian Inn and the Drury Inn are my two favorite hotels in the area. They are both within walking distance to the main drag.

The Bavarian Inn is the bigge$t, 'fancie$t', and probably most well known hotel in town. It is a mega-hotel with an emphasis on family fun (indoor put-put golf, 5 pools, restaurants, play lands and arcades). Little kids are EVERYWHERE. There is a restaurant, lounge/bar, and a cafeteria style eatery in the play area, and a gift shop. You could check in to this place and not ever leave it, because there is so much to do.

The Drury Inn is a much smaller and less expensive version of the Bavarian Inn with one single pool and hot tub, and no other 'fun' areas. They do offer a free hot breakfast, free pop and popcorn all day, 3 free drink coupons at the lobby's bar area to use during your stay, and a free hot appetizer bar at night. There is no where to really hang out and relax in, outside of your guest room (other than the small amount of dining tables in the lobby). If you are all about free food stuffs, and also actually getting out of your hotel and seeing what the city has to offer, this affordable place is a great place to stay at.

I would say that both hotel's guest rooms have a similar outdated look, with a Bavarian themed decor throughout the building. The hotel staff's friendliness, ease of parking, bathroom size and guest room cleanliness level seem about the same between the two places. If you really want to save some money, then stay at the Drury Inn and visit the Bavarian Inn's Family Fun areas during the day. You wont be able to get in the pools there, but you can go in the playlands, restaurants, and arcades as a visitor.

Dining  The most amazing dining experience you will have in Frankenmuth is the Bavarian Inn restaurant. It is the quintessential Frankenmuth experience. Home made EVERYTHING, lederhosen-clad wait-staff, a roaming accordion player, and several different dining rooms that are all uniquely decorated with a whimsical Bavarian theme. It can be both a fun family restaurant, and a romantic date night all in one building. The basement of the restaurant holds the Castle Shops, so you can make your trip here a fun couple of hours! The all-you-can-eat chicken dinner is served family style and is about $20 per adults and children over 12 years old. One money saving tip: the lunch menu is available all day, and is much cheaper than the dinner menu (but it is not all-you-can-eat). Also, if you join the Perks Club, you will get a coupon for a free chicken dinner for your birthday!
There are many other places to eat in town, from the Frankenmuth Brewery to 'T Dubs' (Think: the Bavarian Buffalo Wild Wings). The Bavarian Inn Hotel (across the river from the Bavarian Inn Restaurant) has a restaurant called Oma's that has a good breakfast menu, as well as German cuisine! The whole main strip of the tourist area is full of fudge shops, candy stores, coffee shops, sausage and cheese shops, and many, many ice cream vendors. You can stroll around sampling a huge variety of unique delicacies, before deciding which place to dine at!
The Cheese Haus, where you can see cheese being made and eat sample's of chocolate cheese
Did I mention the Bavarian Inn does great weddings?!

Shopping
The whole town of Frankenmuth is full of unique stores, all which seem to have an emphasis on original and home made items. Aside from the German beer steins, and keychain/magnet huts that are everywhere, there is a wide variety of quality leather, wool, quilts and lace goods. Like seriously nice and expensive stuff. There is the River Place mall (which has less emphasis on German type stuff, and has a food court, inflatable play place, and arcade)  the Castle shops (my favorite!), and the famous Cheese Haus!
You can shop, eat, and have a jolly good time in Frankenmuth!  If you have visited as a child, you may be pleasantly surprised to see that not a whole lot has changed since you left.

*********Things I didn't even mention, but are definitely some of the best attractions in the 'Muth so I dont want to leave them out: Bronner's, Zhender's bakery, the Popcorn Wagon in the River Place mall, the many many outdoor festivals held in town, and the wooden covered bridge in the center of town that you can walk over.

I had a great time this week at CVS. I had my $14 in ECB's from last week to use, as well as some great sales!

Nivea has a great sale this week on their chapsticks. They are on sale two for $5.00, and if you spend $10 on Nivea then you will get $3.00 in ECB's. The Sunday paper has a coupon to save $3.00 off of two lip products, so...

There are some great BOGO deals for Cheerios, Emerald Nut's "Breakfast on the Go" packs, CVS batteries, Orbit's gum, Bumble Bee tuna, and Simply Asia meals. Look for coupons for these products online, and in your coupon binders to cash in on some great saving. I always like to buy my coupon inserts in an even number, b/c of BOGO sales. You can use two coupons when making your purchase, even when one item is considered 'free'.

CVS coupon machine

To contact us Click HERE
CVS has a magic coupon machine in the front of most of their stores, which also doubles as their price checker. You can scan your red Extra Care card in the machine, and multiple coupons will print out of it. Make sure you scan your card a few times so you get all the coupons that are available for the day. These coupons are considers 'store coupons", meaning you can combine them with a manufactures coupon when purchasing one item (read this explanation HERE). This is the best way to maximize your savings at CVS. Take advantage of it, and you will find that you will get the occasional 'free item' coupons, and coupons to save money off of your total bill ( like their "Save $.00 of off a $20.00 purchase" coupon) I have gotten lots of totally free item from this little machine!

For example, today at CVS I got a coupon that printed out of the machine to "Buy one Aquafresh toothpaste get one free". I had two manufacturers coupons to save '75 cents off of any Aquafresh product"........AND there was a 25% off sale on selected Aquafresh toothpastes. Triple whammy!

These pastes were marked down to $3.64 each, and after applying my BOGO coupon AND two 75 cent off coupons (one per item is allowed), my final cost was only $2.14, or ONE DOLLAR AND SEVEN CENTS EACH!! Not too bad!

Time Saving Tip: "The rollover meal" and the "Big Batch Meal"

To contact us Click HERE
Rollover meals, are meals that have leftovers that turn into a whole new meal for the next day. For instance, you make a ham on Monday and then on Tuesday you make a ham soup. Pretty easy stuff, right? Most people probably already do this anyways. With this method you are still cooking something every night. Here is another idea, that is mainly geared towards saving TIME.....the multi-purpose "Batch Meal". This method of cooking will have you spending less time in the kitchen, AND spending less money on pricy convenience foods that are often bought due to running out of time to cook anything.

Example #1: The stuffed green pepper and meatloaf dinner(s):

Buy:
4 green peppers
About 1.5lbs ground beef or turkey
1 onion
1 cup frozen peas
parmesean cheese
1/2 cup Milk
2eggs
1 6oz. can tomato paste
Seasonings mixture of basil, oregano, garlic, and/or pepper.
2/3 cup Bread crumbs
14oz can tomato sauce or spaghetti sauce.
Ketchup

Mix together the meat, seasoning, peas, cheese, onion, and tomato paste. This is the stuffing for the pepper, so stuff HALF of the mix into 4 hollowed-out bell peppers. Pour your tomato sauce over the whole dish.Then.............

Take the other half of the meat mixture and mix in your milk, eggs, and breadcrumbs. This is now your meat loaf, so stuff it into a loaf pan. You can just put both of these prepared dishes in your refrigerator, and cook one today and one tomorrow. If you want to stretch it out even further, then on the third night eat any leftovers you have, or make the leftovers into a whole new recipe (like meat loaf sandwiches)!

****Cook the peppers at 350 degrees for 30 minutes covered and then 30 minutes uncovered.
Cook the meatloaf for about 60-75 minutes, frost with ketchup and bake for about 10 more minutes.

Birds Nest cookies
Preheat oven to 350 degrees.
Toast 1.5 cups of coconut flakes on an ungreased cookie sheet for about 15 minutes. Stir frequently.
For the cookie: 2 stick of butter2 cups of flour1 egg1/2 cup sugar1 tsp. vanilla
Blend together all ingredients to make cookie dough. Roll dough into 1 inch balls and then roll the ball in the toasted coconut. Push the center of the ball in with your finger to make a nest. Bake for 10-12 minutes. Cool, and fill with your favorite treats....jelly beans, m&m's, any egg shaped candy etc. I also added some bling, by scattering some edible pearls on my cookies.

this is truly awful. my second post and already i am digressing from my stated focus. ah well, such is life, and just couldn't resist.

if you are ever in oakland(ca, that is), you must go to mimosa cafe[462 santa clara avenue, across from the grand lake theatre] and have their veggie burger (which is actually vegan). just make sure to tell them to hold the cheese and mayonnaise, and it is definitely worth the little extra to get some sliced avocado with it. the burger is homemade out of shredded carrots, other veggies and some nuts. no tasteless soy concoction here! (the potato salad isn't vegan, but you can get fruit salad with your burger instead).

the waitress there is the sweetest person and if you have any questions about the menu, she will be able to help you. and since she herself is vegan, she is especially aware of peoples food stipulations.

and while talking to her about food, she mentioned New World Vegetarian[464 8th st, oakland, ca] which she said has a phenomenal vegan coconut creme pie. i didn't hear the remainder of what she said because i was too occupied with a) wiping the drool off my face and b) trying to figure out how one goes about making a vegan coconut creme pie. i am definitely going there this weekend and hmmm, maybe i can sweet-talk the chef into giving me the recipe....

just a word of caution, don't go to mimosa if you're in a hurry. the sweetest waitress is usually the only waitress and when things get jammin' service can slow down.

new world vegetarian

To contact us Click HERE

so i went to new world vegetarian, the vegan restaurant in downtown oakland because the wonderful waitress from mimosa said i must try their vegan coconut creme pie. well, i asked the waitress for it and she said they don't have coconut creme pie and she doesn't recollect them ever having it. major disappointment! so, instead i try the coconut cake and my friend gets the german chocolate cake. the coconut cake was good when eaten with the coconut frosting, but the cake on it's own without any frosting on it was kinda bland. the chocolate cake tasted like a betty crocker cake mix and the frosting was super sugary sweet i could barely eat it. i was pretty disappointed by that one. but if you need a good sugar fix and don't mind a plain cake, it's for you. but i did see on the menu (as i was leaving, of course) that they offered a vegan flan. now THAT intrigues me. will be going back soon to try that one, but am also a little hesistant after not having a great experience with the other ones, but a VEGAN flan...wow!

caramel cake in two part symphony

To contact us Click HERE

and so begins my next experiment with a vegan cake.

i have been, for two days, attempting a vegan caramel apple upside down cake.

part one
the 1st picture is of my first attempt. looks beautiful right? well, looks can be deceiving as they say. the caramel top was great, but because i was focusing all my energies there, i wasn't paying enough attention to the cake itself and it ended up being bland and a bit dry. not good. but the asthetics were just what i wanted, so i decided next time i would add some more "zip" to the cake and also add walnuts to the caramel top because that would look awesome. like sticky bun awesome.

part two
so i begin making the cake again. i do the caramel bottom, it looks terrific. i sprinkle walnuts on it and then layer the apples. i my head i am visually seeing how it will look and my mouth is watering. i make the cake. i add cinnamon and nutmeg and some lemon zest to make it yummier. the batter seems wetter than normal, but i casually notice it and really think nothing of it. put the cake in the oven. come back 1/2hr later to check on it and the cake is still quite liquidy and i am concerned. i run through the recipe in my mind, visually seeing my hands add the ingredients and come to a startling realization. i reversed the amounts of sugar and flour. arghhhhh. so now this cake has more sugar in it then flour. i debate what to do, and then decide to just let it bake and see what happens. great confections have been born from simple mistakes, and hey i could be creating the next masterpiece, right? well, the cake finally sets after a considerably longer time than normal. the apples and walnuts have been absorbed into the cake and the caramel from the bottom has bubbled up and spilled over the top. wonderful. i let it set for a few minutes and then flip it over. (see picture #2). what we basically have here is a very sweet spongy cake soaked in the syrup from the caramel topping. it wasn't awful, but it sure wasn't the next masterpiece. i took it to work and my co-workers enjoyed the sugar rush.

now i'm ready for take 3, and once i get it perfected, i will post the recipe, for all of you to make perfectly!

Caramel Apple Upside Down Cake

To contact us Click HERE
it's finally finished (see previous post for the fun had while developing this recipe and for pictures!)

Caramel Apple Upside Down Cake

Topping:
1/2 cup brown sugar
1/2 raw cane sugar
1 tbl water
1 tsp vanilla extract
2 large apples sliced
1/4 cup walnuts, chopped

Cake:
1 1/2 cups flour
1/2 cup raw cane sugar
1/2 cup brown sugar
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
pinch salt

1 cup plain soymilk
5 tbl canola oil
1 tbl apple cider vinegar
1 tsp vanilla extract

1/4 apple, very thinly sliced (i use a vegetable peeler to "peel" very thin slices off

  1. Preheat oven to 375.
  2. In a small saucepan or saute pan, mix the brown sugar, cane sugar and water for the topping. Bring to a boil and boil for one minute. Take off heat and let sit for a few minutes. Stir in the vanilla.
  3. Pour into a 9" cake pan and tip the cake pan so the caramel sauce covers the entire bottom. Sprinkle the chopped walnuts over the caramel.
  4. Arrange the apples slices over the walnuts in a pattern or randomly.
  5. In a large bowl, combine the flour, sugars, baking soda, cinnamon, salt & nutmeg and mix well.
  6. In a seperate bowl, combine the soymilk, oil, vinegar and vanilla and mix well.
  7. Add the wet ingredients to the dry ingredients and mix until well combined.
  8. Add the thinly sliced apples pieces and mix.
  9. Pour into prepared cake pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. It is important to test to see if this cake is fully cooked in the center because the caramel from the bottom will cause it to be a bit more liquid and it might take longer to bake because of that.

Chocolate Frosting recipe

To contact us Click HERE
This is the frosting recipe for the cake I listed in my first posting.

Chocolate Gananche Frosting

-32oz dark chocolate (good quality...there are only 2 ingredients in this recipe so the kind of chocolate you use makes a big deal)
-2 3/4 cups vanilla soymilk

  1. Chop the chocolate up into small chunks and put in a large bowl.
  2. Put the soymilk in a medium saucepan and bring to a boil
  3. As soon as it reaches a boil, take it off the heat and pour it over the chocolate.
  4. Let it sit for 5 minutes, then stir the mixture until all the chocolate is melted (best to use a whisk for this).
  5. The frosting will be very runny at this point.
  6. Let it sit for 4-6 hours or overnight and it will firm up and be deliciously creamy and yummy.
  7. This can be kept 1-2 days at room temperature or can be refrigerated for 3-4 weeks
  8. In the refrigerator it will harden up, so when you want to use it you will have to melt it over a double boiler and then let it firm up again.
Happy Frosting!

Banana Pudding

To contact us Click HERE

This came out pretty good...the key was the super ripe bananas because they are so sweet. And it's extremely easy to make.

Banana Pudding

12.3oz extra firm silken tofu (I really like mori-nu)
3 extremely ripe bananas
2 tsp vanilla
2 tbl maple syrup (you can add more to make it sweeter but be careful because it can overpower the banana flavor).
1/4 cup dates (soaked 4-6 hours to soften)***

Puree all ingredients together.
I served it with sliced bananas on top and fresh nutmeg grated over it.

***I soaked the dates for 4 hours beforehand to soften them so they pureed better. Put them in a small bowl and fill up with water until it just covers the dates. After 4 hours, take the dates out and pat them dry to get rid of extra moisture.

Creamy Chocolate Frosting

To contact us Click HERE

Made this frosting yesterday and got rave reviews. One person even asked if it was made with cream cheese!!!

Creamy Chocolate Frosting

1 pkg (12.3oz) extra firm silken tofu (I use mori nu)
4 oz dark chocolate**
1 tsp vanilla extract
3 tbl maple syrup

Put all in a blender and puree until absolutely smooth, about 4-5 minutes.

**the quality of the chocolate is especially important (as I've mentioned before). Because there are so few ingredients there is nothing to mask it if you use bad quality. Basically if you use cheap chocolate, your frosting will taste cheap. And that's not the image you want to portray -- you want your guests thinking rich, creamy, lusciousness.

The picture is of the chocolate cake recipe I posted previously. The Creamy Chocolate frosting is the frosting on top and I tried a new recipe for the filling, but it didn't come out as well as I'd hoped. The filling recipe called for a lot of cornstarch and the finished product tasted very chalky because of it, even though i let it boil for awhile because that is supposed to get rid of the chalky taste. So, I need to rework that one and will post it as soon as I do.

IMMB: Pomegranate Souffle

To contact us Click HERE

Well, this week is a week of first's. My first SHF (see previous post) and now my first participation in Is My Blog Burning, hosted by Kitchen Chick. When I first heard about this blog event I couldn't wait to participate. But then, I found out that this month is souffles and immediately grew sad because I didn't think I could participate, given my self-imposed limitations. I had never heard of a vegan dessert souffle and had no idea where to even begin.

But, at the last moment (of course), I decided that I was not going to let a small thing like egg whites get in my way, even if they are the main ingredient. I did some research on the web and came up with virtually nothing and again grew disinhearted.

But I thought about it for awhile and decided to break down the components of a souffle - what is it really. It's a flavored "base" with whipped egg whites folded in that is then baked. Well, making the flavored base isn't a problem -- fruit juice and arrowroot should take care of that. But what to do about the egg whites?? The only solution I could come up with is a vegan whipped cream that is then folded into the fruit base to make it light and airy. I'm not sure if this still qualifies as a souffle (it might be more of a light mousse) but it's all I got. So here it is.

I also decided to spice up the presentation since this isn't baked in a ramekin and therefore doesn't have the same poofy eye appeal, and piped it into pre-made filo cups which can be found in the freezer section of your local supermarket. They are fabulous and vegan.

I used the POM pomegranate-blueberry juice mix. I think it can be found most places.

Pomegranate Souffle

Vegan Whipped Cream
12.3 oz soft silken tofu
1/4 cup canola oil
1/4 cup powdered sugar
2 tsp vanilla extract

Place all ingredients in a blender and puree until smooth
Pour into a bowl and refrigerate for 2-3 hours.

Pomegranate base
1 cup pomegranate juice
1 tbl sugar (adjust to your taste)
1 tbl arrowroot
5 tsp pomegranate juice

Put the 1 cup pomegranate juice and sugar in a small saucepan and bring to a simmer.
While that is heating, mix the arrowroot powder and 5 tsp juice together to make a "slurry".
When the juice/sugar mix comes to a simmer, add the arrowroot mixture and whisk constantly until it comes to a boil. Let boil for 1-2 minutes. You will see it thicken.
Take it off the heat. If any lumps have formed, pass it through a strainer.
Let cool. Refrigerate for 2-3 hours until gelled.

When folding the cream into the pomegranate base, I used a formula of 2 tbl of the base to 1 tbl of cream (such small amounts because I was filling the filo cups). This leaves a lot of extra cream but I'm sure you can find a use for it!!

This can be served immediately or refrigerated for several hours.

pierre herme's macarons- montebello.

To contact us Click HERE

I think this is one of the best batches of macarons I've ever made! No large gaping air pockets and all. But the neon pink was totally unintentional. I wanted red but turns out there's more to getting a red macaron than just adding red food colouring.

Montebello is a pistachio-raspberry combination. I cheated a bit by just sandwiching half a fresh raspberry in with the pistachio ganache instead of making the raspberry gelatin like the recipe said to, because I was making such a small quantity (6 macarons only) that it was too fussy. The only worry is that the juices from the raspberry may spurt out and drip from the sides of the macaron.

If you would like the recipe, please head over here.
